Still recovering from all that cooking

I am ever so thankful to God for blessing my family and i with wonderful times together and Christmas and new is always a foodie time of year for us. As i write this i am still recovering from all the cooking i did. On Christmas day i decided to roast a large chicken which turned out absolutely delish. I have never been a big fan of turkey as i often find it rather dry so i often avoid it plus the work that goes into it. Just before the new year my husband decided to bring home not 1 but 2 massive turkeys. I was gobsmacked as he happily announced we will be having that for new years day. As i struggled to fit those big birds in my freezer i pondered to myself how i would be accomplishing the mountain task on new years day. I know that some people start cooking theirs the night before so i just braced myself to do it my way. New years day came so quickly and i started seasoning the turkey first thing and started cooking right away. I had to stay on top of things with my potatoes,veg and gravy as i dedicated too much time to the turkey. After a long day (2 hours) of cooking   I was quite surprised it turned out beautifully. Everybody went back for seconds and thirds and my husband joked about how he felt as if he was eating a prehistoric bird as the drumstick looked humongous on his plate. The good thing about the mammoth task of cooking a turkey is that you can be exempt from the kitchen for at least the next 3 days and that is exactly what happened….thank God for leftovers 🙂
