It has been raining cats and dogs lately forcing me to eat for comfort and my babies to find interesting activities to do indoors. We attempted baking an Orange cake which my scotch bonnet loving sister inlaw kindly gave me the recipe. We played various games and thoroughly enjoyed imaginative play such as pretending to be farmers and taking care of our animals and so on. Nothing beats my fave of all that is the fried plantain served with very hot and spicy chilly con carne (only 45 min cooking time). I had no idea the combination would go together so well but was pleasantly surpriesd. It is a heart dish and i would recommend to anybody who is stuck indoors on a cold rainy winter day…mind you it is meant to be summer here but we all know that British summer would not be truly British without the odd rainy cold week. I watched the news today and heard the sun is back to stay….until the end of September Hurrah!
These days it seems wherever you go there is no escaping apps. There are apps for cooking,exercising,betting,maps,traveling and so on. There is now a new app on the market aimed at helping new fathers find their feet when a new born arrives and beyond. The app called quick tips for dads was created by Dave Burton from the UK who felt like he had no idea how to be a father when his first child was born 2 years ago. Mr Burton who is married and has since had another child said: ‘If I’m honest, I was absolutely terrified.‘When your baby is born, you suddenly feel a huge weight of responsibility and quickly realize that this tiny bundle of life is completely dependent on you.
The app features simple practical tips such as how to change a nappy,give the baby a bath and also other tips on how to take care of new mums. Think of this app as a mumsnet for dad. It does exactly what it says on the box and like mumsnet, fathers can use it as a platform to swap ideas.
If this app was created by the local council i would have felt insulted as i may have perceived it as another attempt to dumb down father’s roles in society by telling fathers what to do and how to do it however seeing as it was created by an individual i reckon its a brilliant idea as its bound to come in handy for some people.
Quicktips for dads is only available on iphone and it costs £1.50 ( roughly $2.50)

You should know by now that i love cooking…especially for my husband and my children and for pretty much anybody who loves to eat. My husband loves to eat and i love to cook so i always say we are a great match. This here is one of my husband’s fave. I do not really have a name for it but we shall call it liver with fresh seasoning just for naming sake. I prefer to use chicken liver because i find any other such as lamb liver quiet bitter and tougher.There are plenty benefits in eating chicken liver as it is high in iron and vitamin A. If pregnant do consult your healthcare provider as liver being high in vitamin A is not meant to be eaten during pregnancy (well that is it what i was told by my midwife). I am no longer pregnant and still not the biggest fan of liver but like i said it is my husband’s fave and when i cook it i mainly just enjoy the sauce it produces.Here is the recipe for those who dare to try.
What you will need:
Fresh chicken liver (i get mine from sainsburys)
1 whole scotch bonnet chilli
1 whole onion
1 whole lemon
2 tbs of rapseed oil (any oil will do as long as it is edible lol)
fresh chopped parsley (half a bunch)
2 Maggi or 1 knor cube (take your pick)
First you wash the liver and put it in a baking dish. Finely grate your ginger (half a hand..i don’t know how to quantify ginger) on top of the liver. Finely grate 10 cloves of garlic on top of the liver. Put half of a tsp of chicken seasoning all over the liver break the Maggi or knorr all over the liver. Cut your lemon in half and remove seed and squeeze both halfs on top of the liver. Chop your scotch bonnet and place it all over the liver. Do not throw away the seeds because the strength of the chilli is in the seeds. Add your parsley and oil and finally rub everything in. You can also add 2 tbs of water to help bring out more juice.
It is very simple to cook,simply place the dish in a preheated oven at 150 and let it it cook for 27 minutes turning with a spoon halfway. By the end of the cooking you should be left with juicy baked liver which can be served with chips or baguette or both and green salad. Enjoy and let me know how you get on. cheers!!

One of my fave shows Naija bites is back bigger and better…well actually it came back in October but as a busy mum one never gets a chance to kick back and enjoy me time like i used to so i am catching up on repeats.The new season filmed in Atlanta features Mary Shittu with TV chef Rasheeda. This is a fun informative programme especially for stay at home mums who enjoy cooking. There you can widen your love of African cuisine mainly Nigerian. I am totally loving this show as you never know which guest might pop in and for me the most surprising guest by far has been Musiq Soulchild who popped in for Efo riro (excuse my spelling). Everything is always bigger and brighter in the states but i do my UK version with chef Busola so i shall keep you posted when the new series begins.You can watch Naija bites on OHTV sky channel 199 or on your mobile phone by downloading the free OHTV app.
Merry Christmas all, hope you have all had a blessed time with loved ones. This Christmas has been truly beautiful; celebrating with my husband and our two darling daughters. It was even more special as it was my youngest daughter’s 1st ever Christmas in the world. My little beauty enjoyed the day dressed in her reindeer tutu outfit and smiled and giggled all day despite her teething pain. My 3 year old enjoyed opening her gifts this year more than last year because she knows more than she knew last year. Before we went to bed she ensured chocolate biscuits and milk was left out for Santa. A few days before she visited Santa at the local department store and told him exactly what she wanted….Doc mucstiffins,a drum, guitar,baby annabelle,peppa pig laptop and oh the list goes on so hubby and i had to up our game this year to much her expectation. There was no snow but there was plenty of laughter,love,food and songs of worship at our place. In the midst of the presents,cooking mayhem there was an essence of peace knowing that none of those things mattered. Jesus our Lord is indeed and always will be the reason for this beautiful time called Christmas. My 3 year old out of the blue put a smile on my face when she said, ‘mummy Jesus was born in Bethleeeam’, to which i replied that’s right and on Christmas day we celebrate His birthday.
